My shortcuts take this quick Mexican meal and make it lightning fast. I buy two rotisserie chickens at a time and put together one family meal with the white meat; the next night I use the dark meat to make this soup with good-quality storebought stock spiced up with jalapeno. Crunchy tortillas are one of several DIY toppings. I like adding scallions and avocado and my husband tops it with chopped cilantro and lots of jack cheese.

2 qt. water
1 lb. stew meat (beef or pork cut into small cubes)
3 cloves garlic, sliced
1 white onion, sliced
2 lb. can hominy, drained
26 oz. can pinto beans drained
1 Tbsp. chili powder
1 Tbsp salt (or more to taste)
Combine all in a stock pot and bring to a boil. Simmer until meat is well cooked and serve topped with chopped cilantro, chopped scallions and slices of lemon for squeezing on top.

My magazine, THINK SPANISH AUDIO MAGAZINE, has some other great Mexican recipes. And you can practice your Spanish comprehension as you read about cooking. And this tortilla soup looks fantastic!
