Sometimes you just don't have the hours in the day to make classic slow-cooking favorites. But this new take on beef stroganoff simmers in a single skillet and is ready to serve in only 45 minutes. The flavors of the tender beef, onion, mushrooms, and Dijon all come together in the broth base as if they had been gently cooking in the same pot all afternoon. So keep the oven off and put away the crock pot, because dinner will be ready within the hour. I find this Beef Stroganoff recipe superior to Martha's slow-cooker recipe. I suggest putting the tenderloin in the freezer for 10-15 minutes before you slice. It makes it much easier to cut. And I prefer thin slices - but that's just a personal thing.
As simple as it is, there is no better shortcut than dicing all your veggies (or at least the ones that can withstand it) ahead of time. Sometimes it's the first thing I do when I get home from the supermarket. Diced onions can even been frozen. They will be a little watery when defrosted, but for some recipes, that actually works.

I actually have plenty of time to let things simmer, but this recipe will allow me to do other things and make something great, too!

I simply love Beef Stroganoff and I too prefer this recipe to the slow cooker recipe...anything that tastes this delicious and can be ready in ONLY one hour is like a dream come true!!
