My go to lunch or dinner is a frittata. As long as you have eggs, you can make them with so many different ingredients. Most often potatoes. It's always fast and tasty.

I try to leave on just what I get from a shop every two weeks. Most of the time I do pretty well. Bulk buying is KEY!

Having just survived the ice storm and living without electricity for a week, I discovered I keep way too much food in the fridge and freezer. I lost everything and I have decided from now on I will only keep on hand what I will use that week. My favorite is a tortilla with Ranch dressing, bacon, green pepper, onion and tomato. Heat it in the oven for a couple of min. Yum! For sweet treats, we get creative with chocolate, white chocolate or butterscotch chips. Melt and stir in peanuts, potato sticks, graham crackers, pretzels, cereal, dried fruit or whatever! Drop onto wax paper and enjoy!

Awesome post Kellee!
That eGullet challenge sounds exciting and totally do-able. I just might take it up.
I really like Natalie's open-faced tuna fish sandwich lunch idea. Yum.

I forgot to add my favorite pantry staple dessert: toast, with peanut butter and chocolate chips, microwaved for 30 seconds. Toasting it first keeps the bread from getting too soft under it's ooey gooey, chocolate-y, peanut buttery topping.

Since Y2K (remember that?), I have made it a point to keep a well stocked pantry and freezer, with enough staples for my family for about one year. I rotate canned fruits and veggies, and pastas and beans are always handy.

I keep a gallon baggie in my freezer and add vegetable scraps like leeks, carrots, onions, and celery to it. When it's full, I pull it out and make a stock. There's always something around to make a very satisfying soup or stew.
I just made a chicken pot pie, enough to eat now, and some to freeze for later.

Yesterday, I looked in the fridge and had the ingredients to make fried rice.
Had the rice, green onions, green peppers and olive oil and in the freezer I had some chicken that I had cooked and frozen chopped up.
The fried rice was delicious.

I do the flour tortilla and chocolate chips, too, but I put in cinnamon sugar with the chocolate chips, fold it over and heat it in a skillet. And, if I'm not too lazy, I dust it with powdered sugar on the plate. Yum!
