Chicken Piccata A flavorful pan sauce pairs with sauteed chicken and pasta for an elegant meal that's ready in just over half an hour. Add this recipe to your repertoire for the next time you want to impress family or friends.

Make your own cutlets to save a little money. Just start with a really cold chicken breast, slice it horizontally, and you'll end up with two cutlets. Place the them between sheets of plastic or in a plastic bag and pound to even thickness so they will cook evenly.

White wine and lemon juice form the base of the sauce, but you can substitute stock or more lemon for the wine if you prefer to leave it out.
