I like simple fish preparations like this one--the snapper is dressed with just Dijon mustard and herbs, which don't overwhelm the delicate and sweet flavor of the fish. I jazzed up the couscous by adding some shallots to to it while it was steaming and then stirred in the same herbs I used for the fish. And it was all ready in 30 minutes.
